This is my own favorite twist on Meatloaf.

I'm absolutely smitten with how Moroccan cooking uses spices like a magician, sprinkling flavor dust everywhere without turning the dish into a fire-breathing dragon that scorches your taste buds to oblivion!
So, I've taken the traditional meatloaf, gave it a wild makeover, and now it's strutting its stuff with some snazzy spices and a classic Italian tomato sauce that's just dripping with style!
Here is what you will need:
Time: About 1 hr to 1 hr 10 min.
Serves 4 people.
Meatloaf
half a KG (1 lbs)of ground beef
1 Finely chopped onion
1 tsp of ground coriander
1 tsp of cumin
1 tsp of paprika
1 tsp of ground fennel
1 egg
salt and pepper
Sauce
1 can of chopped onion and tomato
1 carrot finely diced
1 tsp of Italian herbs

How to make it
Crank up the oven to a toasty 180°C, because we’re about to get cooking!
Grab an onion and chop it up so fine it’ll make a chef weep with envy. Then, toss all those meatloaf ingredients into a big ol’ bowl and mix them up like you’re making a potion for deliciousness.
Don’t forget to give your baking dish a good oiling or buttering. It doesn’t need to be a bread tin; feel free to use whatever dish you’ve got lying around. Just make sure it’s not your grandma’s fancy china!
Slide that meaty masterpiece into the oven for around 45 minutes. You’ll know it’s done when it’s rocking a nice brown tan and starts to pull away from the sides like it’s trying to escape the dish!
Sauce
Once you've launched your Meatloaf rocket into the oven, it's time to concoct your saucy masterpiece!
Begin by giving those finely chopped carrots a quick sizzle for 2-3 minutes. Then, invite your canned tomato and onion sauce to the party. When things start bubbling like a witch's cauldron, dial down the heat to a medium low and let the sauce simmer away until the Meatloaf is ready to make its grand entrance.
As the curtain falls, sprinkle in your Italian herbs and a pinch of salt to taste—because who doesn't love a saucy surprise?
When you're ready to serve, drizzle the sauce over the Meatloaf like it's the star of a culinary opera and dig in with gusto!
